Sunday evening with Cecilia and friends.

There are parties...and there are events!  The occasion this evening included Russian visitors, wine, a variety of well-traveled professors, gorgeous antiques and best of all, a hostess who went out of her way to treat us all with food-love.  Classy, very classy.  I should have been ready with my camera...who knew the table, amidst the candles, would be so beautifully AND bountifully decked out with fruit, several baked dips, cheeses, salmon, tiny bbq sandwiches...and that was just one side of the table.  The other side of the table...sweets galore!  The recipe below is something we hadn't seen in awhile.  Ok, maybe never, in this particular form.  Dark Chocolate Chip Meringue Drops.  Light, yet sweet; chocolate-y, but not too much.  Ahhhh.  I think they fall in the perfect-way-to-end-the-snackfest category. Are you believing they are only about 22 calories each??  Really!

Dark Chocolate Chip Meringue Drops
In large metal or glass bowl, beat 2 egg whites with 1/2 teaspoon cream of tartar on high speed with an electric mixer until soft peaks form. Gradually add 1/2 cup sugar while continuing to beat until they hold stiff peaks. Mix in 1 teaspoon vanilla extract (always get the real stuff, it's worth it!) and 3 Tablespoons unsweetened cocoa powder on low speed.  Fold in 1/2 cup dark chocolate chips (mini-ones work the best) by hand. Drop small mounds of the mixture onto two baking sheets lined with aluminum foil or parchment paper, spacing 1 inch apart. 
Keep them small and bake for 1 hour in a preheated, 250 degree oven. Turn off the oven, and leave the cookies in the oven for 2 more hours, or until centers are dry. Remove from pan and store in an airtight container.  Although you won't have to store them for long.  At 22 calories apiece...why not have a treat any time!
